When time is of the essence or if it’s just too darn hot to do… just about anything, eating unhealthy foods and snacks that leave you bloated and feeling terrible are the wrong way to go. Eating healthy and having healthy snacks that taste like a cheat around the house is a huge bonus. Here are 5 super easy and semi-quick munchie or dessert style snacks that are for sure to become Summer staples.
CHOCOLATE CHIA PUDDING
- 3-4 Cups of Unsweetened Almond Milk
- 2-3 Tbsp of Chia seeds per 1 cup of almond milk
- 3-5 Tbsp of Cocoa Powder
- 12-16 Squirts of Stevia (or preferred sweetener)
If you don’t use stevia or alternative sweeteners feel free to make this less healthy and add 1 cup of a sugar. Add almond milk, chia, cocoa powder, and stevia into blender. Pulse for 10-15 seconds. Pour into container of choice and allow to solidify in fridge. Mix the pudding once every hour to insure pudding consistency throughout mixture.
BANANA ICE CREAM
- 1 bunch of frozen bananas
- 1 can of coconut milk
- Dark chocolate or peanuts
Once frozen, peel the bananas and place in a large dish. Smash bananas and coconut milk together until a paste forms or put into blender, be cautious not to over blend. Feel free to grate dark chocolate or add peanuts. Place in freezer for 2-3 hours. Serve and enjoy your completely legit and healthy banana ice cream!
CLASSIC FRUIT AND WHIPPED CREAM
Strawberries, blueberries, bananas, just about any other fruit you could think of!
- 1 container of heavy whipping cream
- ½ cup of sugar per 500ml or 6-10 squirts of stevia.
- Slice your fruit, whip the whipping cream until peaks form and top fruit.
CHILI LIME ROASTED CHICKPEAS
- 1-2 cans of chickpeas
- 2tsp chili spice
- Lime zest grated
- 1-3 tsp Lime juice
- 1-3 tsp Salt
- 1-3 tsp Pepper
- 1-2 tbsp Olive oil
Wash strain and dry chickpeas . Preheat oven to 350 Fahrenheit Add olive oil and spices + lime juice/zest into bowl. Toss chickpeas in spices and place on cookie sheet. Put in oven for 35-45 minutes or until crispy.
FROZEN YOGURT BERRY BARK
- 2-3 cups Greek or Plain yogurt
- 1 ½ cups Frozen or Fresh Berries of your choice
- 1-4 tbsp Honey
Line a cookie sheet with parchment paper and spread your yogurt onto it. Next drizzle the yogurt with honey ( about 2tbsp ). Layer the berries or fruit of your choice on , top. Drizzle the berries with honey as well. Put in freezer for 1-3 hours and allow to freeze. Once frozen cut into squares and drizzle honey on top then serve!
