3 Salad Recipes to Add to Your Menu This Spring

Spring is here which means so are the yummy and fresh salads. Everybody needs their fill of greens! In this blog learn 3 easy and delicious salad recipes to up your salad game this spring. We have taken the liberty to find the most fitting recipes to truly capture the taste of spring, so keep reading and pick a favourite (or 2).

  • ½ cucumber, chopped (about 1 cup) 
  • 1 avocado, chopped 
  • 3 radishes, trimmed, chopped 
  • 1 cup thinly sliced sugar snap peas 
  • ¾ cup cherry tomatoes, quartered 


  1. ½ cup plain yogurt 
  1. 2 tablespoons olive oil 
  1. 1 tablespoon fresh lemon juice 
  1. 1 garlic clove, finely grated 
  1. ¼ teaspoon Sriracha 
  1. 2 tablespoons finely chopped chives, plus more for serving 
  1. 2 tablespoons finely chopped mint 
  1. Kosher salt, freshly ground pepper 


  • Combine yogurt, oil, lemon juice, garlic, Sriracha, 2 Tbsp. chives, and 2 Tbsp. mint in a small bow and whisk. Let dressing sit at least 1 hour. 
  • Just before serving, toss cucumber, avocado, radishes, peas, and tomatoes in a large bowl. Top with chives. 
  • Divide evenly among plates or serve as full meal.

  • 1 5-ounce package mixed baby greens 
  • 1 cup thinly sliced radishes (from 1 large bunch) 
  • 1 cup thinly sliced cucumbers  
  • 2 grilled chicken breasts  


  • 1 tablespoon white wine vinegar 
  • 1 tablespoon lemon juice 
  • 1 handful mixed fresh herbs of your choice (tarragon, parsley, chervil, cilantro, dill, chives, mint, basil…) 
  • 1 small ripe avocado 
  • 1 rounded tablespoon plain yogurt, or fromage blanc, or sour cream. 
  • Tabasco sauce, to taste 
  • sea salt, freshly ground black pepper 
  • ( It is recommended to prepare the dressing before serving otherwise the avocados will get sad.)  


  • Cut chicken into cubes or slices. Chop herbs up. Slice radishes and cucumber, add spring mix into bowl.  Combine all and toss.  
  • Add the flesh of the avocado into a small bowl and mash roughly with a fork. Add the yogurt and Tabasco sauce, stir in the herbs, and grind on some pepper.

  • 3 tablespoons almonds chopped 
  • 1 pound strawberries rinsed, hulled and sliced 
  • 1 medium cucumber washed and sliced 
  • 10 oz bag baby spinach 
  • 1 handful fresh mint leaves washed and dried


  • 1/4 cup extra virgin olive oil 
  • Finely grated zest of 1/2 lemon 
  • 2 tablespoons fresh squeezed lemon juice 
  • 1/2 tablespoon Dijon mustard 
  • 1/2 tablespoon honey 
  • 1/2 tablespoon poppy seeds 
  • 1/4 teaspoon fine sea salt. Less if using table salt! 


For the dressing add all ingredients into a small bowl and whisk together until smooth, there is no specific order.  For the salad wash and prep it, add all ingredients and toss. Drizzle dressing to finish.
